Vegan chocolate and vanilla marble cupcakes. First attempt in prep for Kay and robbs wedding. Icing colour didn’t work. Need it to go purple!! The taste yummy though :)
Hey. Thanks. They are rather yummy. I adapted it from the choc vegan recipe I use. I use part ground almond but if you want to leave them out you can use extra flour. The almond make the cake really moist though.
-125g vegan marg (1 use pure)
-300ml soya milk
-250g caster sugar
-250g plain flour
-50g ground almonds
-1teaspoon bicarbonate soda
-2 table spoons golden syrup
-Melt the soya butter, golden syrup and most of the milk on the job.
-sift the flour and mix loosely with the sugar and almonds.
-pour marg mixture into flour mixture and fold in.
-mix the bicarb in with the remaining milk and then fold into cake mix.
- pour into cake tins or cases.
The batter will be quite runny. Only takes about 12 mins for cupcakes and 15 mins for cakes at 200 degrees C. I leave them too cool in the tray/tin for at least 15 mins before turning out and cooling completely :)
